There is no "best" thing, but rather look at the Grand Exchange charts on the Runescape site and see what was going down for a while and is now making a steady rise up (one day goes down 5%, next goes down 1% and the next day it goes up 1% – that would be a good thing to try to merchant).

Make sure you don’t invest ALL of your money in said item, but rather have a safe deposit of money in case something goes wrong.

    I merchant godswords a lot!

The amount they drop & fall makes you huge profit if you can afford more than 1.

If you can’t get a godsword look in the Exchange Data base at herbs that are not a steady price.

Merchanting works in 2 ways, either doing your homework and waiting for an item to drop then rise, or to use my favourite steady way. The steady way works on the fact that certain items always have demand as they are 1 use and are player made. This means there is unlimited demand and supply. The main things like this are lobters and other fish. Thanks to the new wilderness, there is a huge increase on demand, so no problem with selling. people who train fishing sell low for quick cash, so you buy low from the levelers, and sell high to the pkers. simply a lobster cost about 280gp at the minimum, and 400gp at the maximum. 400gp profit – 280gp loss= 120gp profit per lobster.
